Mint Chip Smoothie

Ingredients

  • 1–1½ cups unsweetened almond milk (or other plant milk)

  • 1 frozen banana

  • 1–2 handfuls fresh spinach (optional for color/nutrients)

  • 1–2 tbsp cacao nibs or dark chocolate chips (or unsweetened cocoa powder)

  • 1–2 tsp fresh mint leaves (or ½ tsp peppermint extract)

  • 1 scoop vanilla protein powder (optional)

  • Ice (optional, for thickness

  • Sweetener to taste: honey, maple syrup, dates, or stevia

Method

  1. Add liquids first. Pour the almond milk into the blender.

  2. Add soft ingredients. Add the frozen banana and if using, spinach.

  3. Add flavor. Add mint leaves (or peppermint), cacao nibs or cocoa, and protein powder.

  4. Sweeten. Add sweetener to your taste preference.

  5. Blend. Blend on high until smooth and creamy.

  6. Adjust texture. Add more milk if too thick, or more ice if too thin.

  7. Serve. Pour into a tall glass and enjoy immediately.
